Baked Trout is a Classic Mediterranean fish

Ingredients (Serves 2)
2 whole trout, cleaned (heads optional)
Sea salt and freshly ground black pepper, to taste
1 tbsp extra-virgin olive oil
1 lemon, thinly sliced (plus extra wedges for serving)
4 sprigs fresh parsley
4 sprigs fresh thyme or Rosemary
Instructions
Preheat & Prep
Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or foil for easy cleanup.
Season the Trout
Pat the trout dry with paper towels. Season both inside and outside generously with salt and pepper.
Stuff the Fish
Place a few lemon slices inside each trout along with parsley and thyme sprigs. This infuses the fish with citrus brightness and herb aroma as it bakes.
Drizzle and Roast
Put the trout on the prepared tray. Drizzle each with olive oil and place a few additional lemon slices on top. Roast for 15 to 18 minutes, or until the fish flakes easily with a fork and the flesh is opaque.
Serve
Transfer the trout onto a serving plate. Garnish with lemon wedges and fresh herbs. Pair beautifully with a crisp green salad or roasted seasonal vegetables.
